Miss Sarah’s Breakfast Muffins

A couple of weeks ago we hosted my former—oh how it pains me to say that–intern, Sarah, for a birthday brunch!  Sarah is a bit of a rock star in our eyes.  Not only was she an asset to Mindy Lockard Etiquette–she is responsible for taking our brand into the wonderful world of social media, even when I resisted–to Elle and Maggie she’s an A list celebrity.

To be honest, I have a small issue with brunch, and it all has to do with the nine letter word: casserole.  Don’t get me wrong, I love a good casserole but I don’t love serving them at a party.  Call me shallow, but when it comes to food… looks do matter. And let’s face it a half eaten casserole can look, well for lack of better words, less than yummy!

A solution to the casserole dilemma and need to include a staple brunch item “the egg” are our Breakfast Egg Muffins. This particular morning we named the breakfast muffin after the darling Miss Sarah. Why? Because they are made with Sarah’s favorites of course.  When you make these breakfast muffins feel free to name them after your favorite aunt Millie that is if you have an aunt Millie or your best friend Susan, again if her name is Susan… it’s said that a person’s favorite sound is that of their own name so your guest’s are sure to love having a menu item named in their honor! Oh, and these little muffins are a dream for any host or hostess as they can be customized to his or her guest’s liking or what’s growing in the garden, they can be prepared the night before and look gorgeous on a platter!

So here we go…

First sauté the breakfast meat of choice and/or veggies. Set aside to cool…

Next in a blender beat 6 eggs, 1/4 cup milk, 1 cup of cheese of choice, salt and pepper.

After the eggs are whipped, grease a muffin tin with Olive Oil and fill the bottom with your favorite herb seasoned croutons.  We love those made at our favorite deli.

Fill with the meat mixture.

Pour the egg mixture over.

Top with cheese, cover and chill overnight.

Bake at 350 degrees for 30 minutes or until firm and serve to your guest of honor!  Bye bye, half eaten casserole and  hello pretty platter of individual breakfast muffins!  Did I mention that they are delicious too?! Yum!

..And what yummy breakfast muffins they are! Thank you Mindy for your thoughtfulness :) We had an amazing brunch with the family. Can’t wait to do it again soon!
