Take to the Table Tues: Out of this World Family Night

by Mindy Lockard on January 4, 2010

During the socially slow winter months our Friday nights are set aside for Family Friday. Every Friday (you may remember this) we come together for  a new theme dinner and adventure. We use these Family Fridays as a way to reconnect as a family after the busy holiday months and as a tool to hone in on some gracious living aspects that are important to us such as table manners, conversation skills, and introducing new cuisine into the girls’ food repertoire.  We bring you our Family Friday on Tuesday to get your creative and family fun juices flowing…

Family time is so important in our quest to raising a Gracious Generation.  One of our favorite Family Fridays is one that is Out of this World: a galactic candle lite dinner, followed by a viewing of Daddy’s favorite movie Star Wars.

Getting in the ZONE…

Starts with the decor.  Have a little helper (who is savvy with scissors) help draw stars with pencil and cut them out. Hole punch the top and thread them with wrapping string.  We still have these streamers in our party cupboard ready and waiting for those star studded nights. Tie or tape above table.

The Menu

Spacey Soup (from the Junior League of Eugene’s Savor the Flavor of Oregon, Easy Minestrone)

1/4 cup extra virgin olive oil

1 large yellow onion, chopped

1 cup carrots, diagonally sliced

1 cup zucchini, diagonally sliced

1 cup fresh green beans

2 cups Swiss chard, coarsely chopped

1 cup canned plum tomatoes, crushed

8 cups chicken broth (homemade or canned)

Salt and pepper to taste

1 cup dried ziti pasta (I use stars or fun shapes)

1 1/2 cups canned red kidney beans

Freshly grated parmesan cheese

Heat olive oil in a large stock pot and saute onions until soft and golden.  Add carrots, zucchini, green beans, and Swiss chard, one at a time, (cooking each 2 minutes before adding the next).  Add tomatoes, broth, salt and pepper.  Cook on medium-low heat for about 20 minutes, or until vegetables are tender.  Add pasta and cook until done.  Add beans and heat through.  Serve with parmesan cheese sprinkled on top of each bowl.

Light Saber Sticks

Use any store bought or homemade biscuit recipe.  We have fun making them.

Brush with butter and sprinkle with fresh parmesan.

Galactic Goo Drink

A little trick I learned from Liesel.  In a blender combine:

16 oz Odwalla’s Superfood

2 Fresh Mango

1 cup Fresh Spinach

1 can of pears (not in syrup)

1 cup Apple juice

Blend and enjoy!

Do you have family theme nights?  If so, please share what you do!
