Take to the Table Tuesday: Easy Sandwich for a long day!

Shredded chicken sandwiches are one of my favorite meals for pleasing my family of four after a long Tuesday or when we host overnight guests during football season and need an easy dinner to feed hungry fans!

Here’s what I throw into the the Slow Cooker…

4 chicken breasts

1/2 cup red pepper

1/2 cup green pepper

1/2 cup orange pepper

1 cup shredded carrots

1 minced onion

2 cups BBQ sauce

Cook in the Slow Cooker for 5 hours on high.

Take large rolls (I love brioche) and cut the middle out.   Put the tops and bottoms in a basket and set the middles aside for another day… like the following morning!

When you get home from a long day or a cold game this easy dinner will greet you at the door with its sweet and tangy aroma!

Top with your favorite coleslaw. We use broccoli slaw with a rich poppy seed dressing! Etiquette Note: Any “Sloppy” Sandwich is best eaten cut into fours. If it’s still too messy? The fork and knife are your friend!

The following morning overnight guests will enjoy the best part of the brioche bun as the toast in your favorite French toast recipe!

Hi Mindy,
Since soccer and football overwhelm our fall, (in a great way!), I must try… tomorrow night! Can you give me a hint on where the best brioche in town can be found? (Since I try to NOT have that kind of goodness in my home!)

That looks delicious, can’t wait to try it. Here is another great crockpot sandwich: 3-4 lb beef roast, 1 can cream of celery soup, 1 packet lipton onion soup mix. Cook on low 8 hours. Serve on buns with horseradish sandwich spread. Fabulous!

I’m a crockpot lover myself… “Not Your Mothers Slow Cooker Cookbook” is one of my favorites. Always amazed you can throw a bunch of stuff in a pot and come home to a wonderful smell and meal 6 hours later. Thanks for the recipe!

This dish hit a home run or shall I say “touch down” with this winning sandwich creation! Feels good when the whole family enjoys dinner and nothing has to be quickly wash down with a glass of milk, (Miss Kelsie). Thanks again. Can’t wait to see what you come up with next… hope it won’t be long. 🙂
