Take to the Table Tuesday: Pork Sliders

by Mindy Lockard on June 21, 2011

Summer is here and so is the grilling season.

Sigh, I do love grilling season.

However, every now and then I like to visit my slow cooker… just so it doesn’t forget me.

This particular slow cooker dish is perfect for feeding a crowd.  As much as I love pulled pork, sometimes traditional recipies call for a cut that’s less than lean.  For this particular recipe, we like go lean with a pork loin.

In the slow cooker add the following ingredients . . .

– Pork loin
– 1 cup shredded carrots
– 1 chopped green pepper
– 1 chopped red pepper
– 1 chopped yellow onion
– 1 1/2 cup BBQ Sauce

Cook on high for 4 hours or medium for 8 hours. Shred pork — because a loin is a leaner meet it may be a bit more difficult to shred.

Top slider buns with pork and top with coleslaw.

“How do I eat these?” some ask.

It’s rather simple. Start with your fingers (avoiding the 5 finger lick) but when the slider starts to slide south — hopefully not onto your clothing — it’s okay to reach for utensils. Using a knife and fork isn’t a sign of being pretentious or failure, it’s a sign of strength and knowhow. Knowhow is a good thing Gracious Girls.

Enjoy every last bite!
