Take to the Table Tuesday: Shredded Beef Tacos

I don’t know about you, but the gray days of winter have me feeling a little blue when it comes to creativity in the kitchen. Blue as in “B” to the “O” to the “R-I-N-G”

I nearly jumped through the phone when my darling friend Jen suggested a dinner swap for the next couple of weeks with two of our other friends.

For the next three weeks, you can call me Miss Tuesday.

Last Wednesday, Jen put together a dinner that was so yummy I had to share.

We start with a slow cooker, 2 – 3 pounds chuck roast & 1/4 cup Chili Powder


and this…


That’s right. Pepsi.

Crazy? I know… but don’t knock it until you try it.

After it’s been slow cooking for the day, (8 hours) shred the beef.


And serve with warm tortillas and your favorite toppings.




It’s a wrap.
